Kisir (Turkish Bulgur Wheat Salad) Recipe
This is not a traditional Turkish Kisir, but the best I can do with the ingredients available in local stores. The salad is simple, and it’’s good for a light summertime meal.
1 cup bulgur wheat (Bob’’s Red Mill Light Bulgur Wheat is good)
1 cup boiling water
1 1/2 tablespoons olive oil
1 tablespoon lemon juice
1 cup fresh Italian parsley (1/2 bunch, chopped)
1/4 cup fresh mint leaves (chopped)
1 large roma tomato (seeded and diced)
2 green onions (chopped)
1/2 teaspoon salt
black pepper (to taste)
cayenne pepper (to taste)
4 teaspoons red pepper paste (or Ajvar)
