Raw meatballs (Cig Kofte)

Ingredients: 355 cal (6 servings)
500 gr leg of mutton (without fat) ground 3 times
250 gr. fine bulgur (1 1/5 glass) (see preceding recipe for bulgur)
2 firm tomatoes
500 gr. onion petioles
1 bunch parsley
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1/2 teaspoon hot red pepper
1/4 teaspoon allspice
1/2 teaspoon cumin

Ingredients: 670 cal (6 servings)
500 gr. fine bulgur (bulgur is boiled and pounded wheat, and available at Turkish groceries)
250 gr. Fatty ground meat
250 gr. minced mutton (not fatty)
1/5 tablespoon red pepper
1/5 tablespoon cumin
1 bunch parsley
2 tablespoons margarine
2 onions
500 gr. pine nuts
50 gr. currants

Poached eggs with yoghurt

Ingredients:
• 8 fresh eggs
• 7 glasses of water
• 500 gr. yoghurt
• 1/2 teaspoon red pepper
• 1 1/2 teaspoons salt
• 2 tablespoons vinegar

Kisir (Turkish Bulgur Wheat Salad) Recipe

Etli Pide - Pitta Bread with Ground Meat

Ingredients
Flour 4 ½ cup
Yogurt 1 ½ cup
Salt 2 tablespoons
Onion 2 medium size
Dry yeast 3/4 tablespoons
Tomato 3 medium size
Sugar 1 teaspoon
Ground Meat 2 4/5 cup
Water ½ cup
Pepper paste 1 tablespoons

Coban Koftesi (Shepherd’s meatballs)

Ingredients
• 600 gr ground meat
• 1 teaspoon salt

• 3 large tometoes or 21/2 tablespoons unsalted tomato paste

Kadin Budu Koftesi (Lady’’s Thigh Meatballs)

Ingredients
• 3/4 cup olive oil
• 1/4 bunch parsley
• 1 lbs. semi-fat ground meat
• 1 tsp. salt
• 1/2 tsp. black pepper
• 2 onions
• 3 Tbls. flour
• 5 eggs
• 3-4 Tbls. margarine
• 2 Tbls. uncooked rice

Biber Dolmasi - Stuffed Bell Peppers

Ingredients
6 large bell peppers
1/4 cup pigniola nuts
1 1/2 cups medium grain rice
1/2 cup currants, washed and stems removed
1 1/2 cups water
1 teaspoon cinnamon
3 large onions, finely chopped
1 teaspoon black pepper
3 medium tomatoes, peeled and chopped, 1 extra tomato to top the stuffed peppers
1 ½ teaspoons salt (or salt to taste)

1000 gr. lamb
4 potatoes
3 carrots
1 celeric
2 medium onions
10 glasses water
1 teaspoon salt
SAUCE: 2 tablespoons margarine, 1 tablespoon flour, 2 lemons(juice), 3 egg yolks
